The first dish I would like to share are pierogi (피에로기, sing. pieróg, pronunciation is like 피에룩). Pierogi are traditional Polish dish, and the most popular variation are pierogi ruskie (피에로기 룻키에), they are filled with mashed potatoes and dry cottage cheese. In other variations they can be filled with seasonal fruits (like strawberries or blackberries), mushrooms, spinach or meat. Pierogi should look like this.
The recipe I would like to share is used in my family for years.
레시피: 피에로기 룻키에
Dough:
1/2 kg of plain flour
1 egg
1/2 spoon of salt
1 glass of warm water
Sift flour onto the large bowl, add egg, salt and warm water. Knead until egg and other ingredients are well combined. Then put the dough on the breadboard/countertop that is lightly floured and knead for a few minutes. Then wrap in plastic wrap and let it rest for 30 minutes.
Filling:
1/2 kg of potatoes
20-30 decagrams of dry cottage cheese
1 onion
oil
salt
pepper
Cook the potatoes and mash them in a bowl. While mashing, add crumbled cottage cheese. Chop the onion and fry it up until it gets gold, then add it to potatoes with cheese. Season with salt and pepper.
Pierogi making:
Roll out the dough on light floured surface (breadboard/countertop), it have to be about 2 millimeters thick. Using a glass cut out circles. Then, put a tablespoon of filling on every circle. Fold in half, join the sides and pinch them with fingers to glue them together. Put pierogi into boiling, salted water. Mix and cover, after they float remove the cover and boil for about 3 minutes more. Drain them carefully and put on a plate or bowl.
Pierogi tips:
> When the dough is too hard or soft, add some water or flour.
> When the dough is too big to roll out everything, divide it on two pieces, place one aside and cover with clean cloth or paper towel.
> When it's too much of dough, you can chop it and boil, to make noodles.
> The dough recipe is good for every type of pierogi, no matter are they filled with, for example, spinach or strawberries.
> Pierogi ruskie are really good with sour cream or fried pork scratching.
> You can fry them with some butter, to make them gold and crunchy.
> You can add some chopped dill to filling.
